the origins
Shiogensui began not as a business plan, but as a passion. The founder, Hiroshi Takahashi, spent years exploring ramen from the inside out, working at multiple ramen shops, learning ingredients, technique, and the heart of what makes a bowl truly memorable.
At age 30, he made a bold decision: to dedicate his life to ramen. After seven years of intense training and self-discovery, he opened his first shop in Japan with a simple but ambitious mission: to create ramen that is pure, balanced, and unforgettable.

From one to thirty stores
What began as a single ramen shop in Japan has grown into a thriving network of over thirty locations across the country. Each new opening marked not just expansion, but a reaffirmation of Shiogensui’s values; consistency, craftsmanship, and respect for tradition.
The brand never chased growth for its own sake. Every store was carefully developed, ensuring that the same quality, spirit, and attention to detail could be felt in every bowl, in every city.
THE EXPANSION
Over the years, Shiogensui has become more than just a restaurant: it is a cultural icon of Osaka’s ramen scene, known for its welcoming atmosphere and devotion to the true spirit of shio ramen.
Now, for the first time outside Japan, Shiogensui brings this legacy to the UAE, inviting food lovers to savor a bowl that embodies generations of tradition, precision, and soul.
