Our Kanji

Kanji are traditional Japanese characters borrowed from Chinese writing. Each kanji carries its own meaning, history, and philosophy, often representing ideas, nature, or human values. Unlike simple letters, kanji tell a story. One symbol can express an entire concept, emotion, or principle. 

For Shiogensui, we carefully chose five kanji to represent who we are and what we stand for. Each character reflects a core value of our brand. 

Shiogensui - 塩元帥

Shiogensui literally means “Salt Marshal.”

In ancient Japan, a marshal was a guardian of order, a leader who protected values, tradition, and discipline. By combining this with shio (salt), the most essential and pure seasoning, Shiogensui becomes a symbol of mastery over simplicity.

Reigi - 礼儀

Reigi represents respect, manners, and humility. In Japanese culture, it is the foundation of every interaction. At Shiogensui, Reigi lives in the way we welcome our guests, prepare each dish, and honor our craft. It is the quiet respect we show to our ingredients, our team, and every person who walks through our doors.

Wabi-sabi - 侘寂

Wabi-sabi teaches us to find beauty in imperfection, simplicity, and the natural flow of time. It embraces authenticity over perfection. At Shiogensui, this philosophy guides our space, our food, and our mindset, honest flavors, minimal distractions, and a deep appreciation for the present moment.

Omotenashi - おもてなし

Omotenashi is the art of selfless hospitality, anticipating needs before they are spoken. It is not service, but care from the heart. At Shiogensui, Omotenashi means creating moments of warmth, comfort, and connection, so every guest feels truly seen, valued, and at home.
